Chicken Ghee Roast Recipe: A Mangalorean Delicacy

Chicken ghee roast is one of the most popular delicacies down south. It is a Mangalorean delicacy. The origins of chicken ghee roast can be traced back to the small town of Kundapur,
which is very close to Mangalore. Chicken ghee roast is a spicy and tangy chicken recipe. You can adjust the spice according to your taste and make sure you cook it in generous amount of ghee. This obviously means that this chicken recipe is not for people who are calorie conscious.

The flavour of ghee gives this recipe its distinct aroma and taste. So, do not skimp on the amount of ghee you put into this chicken recipe. Interestingly, there is no use of water in the recipe and the chicken gets cooked in ghee and the steam generated by it. It is a relatively simple recipe to prepare and is a perfect dish to serve on a cold winter day. Take a look at the Mangalorean recipe of chicken ghee roast and do give it a try.

All you need Chicken - 500gms Curry leaves - 1 sprig Ginger garlic paste- 2tbsp Salt- as per taste Sugar- 1tsp Pepper powder- 2tsp Garam masala powder- 1tsp Jeera (cumin powder)- 2tsp Dhaniya (coriander powder)- 2tsp Kashmiri red chilli powder- 1tsp Dry red chillies- 2  Tamarind paste- 1tbsp Tomato puree- 1 cup Ghee- 7tbsp+2tsp Coriander leaves- 1/2 cup (chopped)

Procedure 1. Heat the ghee in a pan and add curry leaves, dry red chillies, jeera powder, ginger garlic paste. Saute for a minute on medium flame. 2. Then add tomato puree and cook for 3-4 minutes. 3. After that, add dhaniya powder, kashmiri red chilli powder and mix well. Cook till the ghee

 separates from the masala. 4. Now, add another two teaspoon of ghee, chicken pieces, salt, garam masala powder and pepper powder. Mix well and stir fry for 5-6 minutes. 5. Then sprinkle half of the chopped coriander leaves, sugar cover and cook on low flame for 8-10 minutes. 6. After that open the lid and add the tamarind paste. Cover and cook for another 5-6 minutes till the chicken is completely cooked. 

7. Once done, switch off the flame and garnish with rest of the coriander leaves. Chicken ghee roast is ready to be served. Serve this Mangalorean chicken delicacy with dosas or chapatis.

Nutrition Value Chicken ghee roast is a high calorie dish. It has around 600 calories and is rich in carbohydrates.
