Paneer stuffed capsicum is a perfect vegetarian recipe to try out during this season as the capsicums are available in plenty. The mushy and spicy paneer filling inside the flavourful capsicum gives it a lovely flavour.

All you need Capsicum- 4 (big sized) Paneer- 250 gms (crushed) Onion- 1 (chopped) Ginger-garlic paste- 1tsp Red chilli powder- 1tsp Jeera powder- 1tsp Chat masala- 2tsp Dhaniya powder- 1tsp Salt- as per taste Garam masala powder- a pinch Jeera (cumin) seeds- 1tsp Oil- 3tbsp
Procedure 1. Wash the capsicum and make a small hole at the top. Sccop out all the seeds out of the capsicum using a scooper. 2. Smear the capsicum with little oil and salt. Heat about one tablespoon of oil in a pan and fry the capsicums till they become soft and turn golden brown. Keep it aside. 3. In the same pan heat another two tablespoon of oil and add cumin seeds to it. 4. Then add the chopped onion and fry till they turn golden brown.
5. Add ginger garlic paste, red chilli powder, jeera powder, dhaniya powder, chat masala and fry for 3-4 minutes on medium flame. 6. Then add the crushed paneer, salt and stir fry for 4-5 minutes on medium flame. 7. Then add garam masala powder and allow the paneer to cook completely. 8. Once the stuffing is ready, switch off the flame and allow it to cool down. 9. Fill the the stuffing into the fried capsicums and serve. Paneer stuffed capsicum is ready to be served. Enjoy this delight as a side dish with rice or rotis.
