Onion Tomato Coconut Milk Kuzhambu

Kuzhambu means a stew. This particular South Indian vegetarian recipe is made with onions and tomatoes which are cooked in coconut milk. The spices give this dish an appetising aroma. The soothing taste of the coconut milk makes this dish extremely delectable. It is a perfect for the winters and you can serve it with hot idlis, rice or chapatis

Serves: 3 Preparation time: 10 minutes Cooking time: 20 minutes All you need Onion- 1 cup (chopped) Tomatoes- 2 cups (chopped) Green chillies- 2 Turmeric powder- 1/4 tsp Chilli powder- 1/2 tsp Tamarind paste- 1/2 tsp Dhaniya powder- 1/2 tsp  Jeera powder- 1/2 tsp Thick coconut milk- 2 cups Mustard seeds- 1/4 tsp Urad dal- 1/4 tsp Coriander leaves for garnishing Oil- 2tbsp Salt- as per taste

Procedure Heat the oil in a pan. Splutter the mustard seeds and urad dhal. Add the chopped chillies, onions ,turmeric powder and salt. Fry till the onions are transparent. Add the tomatoes and cook till they are soft. Add the powders, tamarind paste and a cup of water.  Cook till the onions are cooked and the raw smell is gone. Now , add the coconut milk and simmer for a minute. Remove from heat . Garnish with coriander leaves . Serve hot with rice or other tiffin varieties.

Nutrition Value This recipe is low on calories and high on nutrition. The recipe is cooked in very less oil and so dieters can opt for this light vegetarian recipe.
